After weeks of meals brought by friends, meals bought from the steam table at Whole Foods, meals to-go from various local restaurants, we are indeed, in fact, cooking.
A few nights ago, I took the meatballs and peas recipe and turned it into meatloaf and peas (who has time to roll little balls???) which was quite delicious. I tried putting the peas in the center of the meatloaf (like a carnivore’s Twinkie) but I don’t think that did much. Mixed the rest of the peas with steamed rice. That was good. Might be nice next time to mix the peas throughout the meatloaf. Or not. Amounts are vague but basically the recipe was 1 lb ground beef, 2 eggs, 1/2 to 1 cup of matzo meal, generous amount of allspice (1 Tablespoon or 2?), and salt. Mix, pat into loaf pan, and bake at 350 about 30 minutes, or till done — we rely on our handy dandy electronic thermometer (Thanks Marcia!).
And tonight, Scott roasted a chicken, while I coached from my nursing station in the bedroom: Take one 4-5 lb chicken, slide skin away from flesh and stuff with thin slices of meyer lemon and stalks of rosemary (both from our yard), salt and pepper inside cavity and stuff with lemon quarters and more rosemary. Salt and pepper the outside of chicken. Bake at 350 in covered dutch oven, basting occasionally with juices, for one hour 30 minutes or until done according to thermometer.
He did a STELLAR job. The results were moist, crispy skinned, and lemony. Served with roasted asparagus, and gnocchi with butter, parmesan, and cream. Delicious.
We’re also cooking on the baby soothing front. Or just lucky today. Finally, after what seems like only frustration from the famous 5 S’s of the Happiest Baby DVD, today, we saw it happen. Swaddled, side-lying, at times even before being offered the pacifier for sucking, or the shaking, or the shushing — I repeat to emphasize, only swaddled and turned on his side, our baby went from wailing to silent. Just like that. Ha – lay – luuuuu- yah!

It sounds like Jonah just went through his six week growth spurt, and your starting to make your way over the six week hump. Things should generally get easier from now on not that they won’t also get harder from time to time. For me it is always two steps forward, three steps back, three steps forward, and some more variation of that so that eventually it seemed like maybe after everything was added and subtracted I ended up moving forward by one step a month. Something is something I always say. Happy six weeks!
